Nicaragua Travel Entry Requirements Updated!
Three cheers for your next travel to Nicaragua! Effective July 21, 2023, Nicaragua no longer requires proof of COVID vaccine or a negative PCR test in order to enter their country. Time to celebrate! This is great news for anyone wishing to travel to Nicaragua – or – those who need to renew their visa from Costa Rica (like my family does). My family has lived in Costa Rica since March of 2021. In order to legally stay in this beautiful country, we are required to leave and re-enter Costa Rica every 90 days. The easiest and most cost effective option for our family is to drive 3.5 hours from…

Why did we move to Costa Rica with kids?
It’s now been almost 2 years since we sold everything and made the move to Costa Rica. I get asked all the time: “why did you do it?” Today I want to share a little of my perspective from the journey. In October of 2020, my business downturned and my husband failed to get the full time job he had been promised for years in higher education. Because of this, we couldn’t pay our mortgage and we had 3 young children ages 5 and under. Something had to give! We made it through with help from our church and family, but we couldn’t sustain life as it was. I told…

How to Make Coconut Milk
We have recently learned how to make coconut milk and what a perfect time to share what we have learned with you! Living in Costa Rica has been such a treasure for so many reasons, but we especially love the abundance of fruits and vegetables year round. You can make coconut milk anywhere in the world you have fresh coconuts! Ours cost around the equivalent of 50 cents in USD in the markets. Other times we get them for free when they fall from a tree here in Costa Rica! From one single coconut, you can make: Water from the Coconut Coconut Milk Flakes Coconut bowl (if you’re ambitious and…

Homemade Granola Bars to Make for a Quick and Healthy Snack
We embarked on a journey since becoming parents to eliminate funky ingredients in our food, for our own health and for our littles. These homemade granola bars are a fan favorite in our household! We keep them in the fridge so our boys can grab a quick and healthy snack anytime they get a hunger pang. Ingredients for Homemade Granola Bars 1 cup smooth/creamy peanut butter 2/3 cup honey 3 Tablespoons chopped pepitas OR nuts (we used almonds) 1/2 teaspoon sea salt 1/4 teaspoon ground cinnamon 2 1/2 cups dry oats 1 teaspoon vanilla extract 1/2 teaspoon chia or flax seeds 1/3 cup mini chocolate chips – or regular chocolate…

All Purpose Cleaning Spray Recipe – Skip The Chemicals And Save Money!
I ditched the chemical cleaners a long time ago because frankly, they stink. Not just the smell – but they are endocrine disruptors, allergy and asthma enemies, and overall just super bad for your health. Having three little kids means our house is messy. I mean so messy that even when I clean all day, it still looks like a tornado went through our house. At least cleaning can feel a little less troublesome when I make a homemade cleaner in a cute bottle! We live in Costa Rica and it seems like EVERY CLEANER I have found has nasty scents and chemicals in it. So, I made my own…

Healthy Baked Cinnamon Apples with No Added Sugar
In the past week I have made these healthy baked cinnamon apples 3 different times! My kids and husband (and I) love them so much. I recently realized I have Candida overgrowth (yeast) and have embarked on a journey to eliminate added sugar, gluten, alcohol etc from my diet – but my sweet tooth has not been happy. Enter – this recipe! Granny Smith apples are more tart/sour and have way less sugar than the other, sweeter varieties of apples. Because I’m trying to limit my sugar intake, these are my go to fruit lately! The fiber in apples is great for your digestive track too. Damian always reminds me…

Preschool Life Cycle of the Turtle Discovery Bin
Need a great activity to study preschool life cycle with your students? Use this activity as a great inspiration! You can easily change up this hands on learning tray for other animals to introduce your preschoolers to the life cycles of different animals. One of the best ways to let preschoolers learn is to touch, see, and manipulate with their hands. Ever since I became a preschool teacher at a bilingual school in Costa Rica, I have immersed myself further into the Reggio Emilia inspired teaching approach. I came up with this idea with a few simple manipulatives to focus on preschool life cycles: Free printable puzzle like this one…

How to Make Refrigerator Pickles
These refrigerator pickles are so easy to make, take little prep time, and are totally customizable to your taste! Fun fact – dill does not exist ANYWHERE in Costa Rica. We have searched markets, stores of all kinds and still after living here 6 months have not found dill weed or seeds. Usually that’s our favorite kind of pickle, so we had to really get creative. I found the turmeric gave this a nice flavor! Ingredients for Refrigerator Pickles 3 pickling cucumbers, sliced in rounds or spears 1/4 cup Vidalia onion, sliced 3 TBS apple cider vinegar 1/2 cup water 2 cloves garlic, smashed 1 1/2 teaspoons pickling salt, or kosher salt 1/4 teaspoon granulated sugar 1 tsp ground turmeric 1 slice of jalapeño…
