Vegan Cookies that Everyone Will Love!
These vegan cookies will be ones everyone will love to eat – whether they eat plant based or not!
Let’s face it. So many plant based recipes are flat out gross – inedible – waste of money on the ingredients it can be frustrating.
I am on a journey to create delicious vegan food that is suitable for kids and adults – and that is SIMPLE to make (that is key with having 3 toddlers y’all).
These cookies are so amazing, they did not even last 24 hours in our house. We ate them all. No shame!
Ingredients for Vegan Snowballs
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup non-dairy butter (we like to use Country Crock almond or olive oil sticks)
- 2.5 cups all purpose flour
- 1 cup almonds, chopped in a food processor (or in this case, we used cashews because all the almonds were eaten by the 3 little hobbits)
- 1 additional cup powdered sugar (to roll cookies in)
STEP ONE – Preheat your oven to 350 degrees.
STEP TWO – In a large mixing bowl, cream together the first 1 cup powdered sugar, vanilla/almond extracts and butter until creamy.
STEP THREE – Add the chopped nuts to the sugar/butter mixture, then slowly mix in the flour. Your dough will be a bit crumbly but will work into a ball when formed with your hands.
STEP FOUR – Shape the dough into balls about a walnut size. Place onto your baking sheet. I HIGHLY RECOMMEND getting these silpat baking mats. I have used the same ones for years and they are incredible to prevent a burnt, sticky cookie mess. Just trust me.
STEP FIVE – Bake these bad boys for about 12 minutes until just barely golden brown. Cool on a cookie cooling rack like these ones here for around 15 minutes, then roll in powdered sugar.
Voila! These vegan snowball cookies are super easy, and sure to please the plant based folks and anyone you meet looking for a sweet treat.
