How to Make Rainbow Sushi
Let’s go on an adventure today to make Rainbow Sushi at home!
If you’re a sushi lover like I am, you KNOW how costly it can be to get it from a restaurant.
Now – I’m definitely not a professional sushi chef, but when I’m sticking to my budget and get that craving, now I know I can make this at home to satisfy my cravings!
Bonus – my 4 and 6 year olds love to make this rainbow sushi with me, and eat it too. Win!
Make sure to have a bamboo mat to roll up your sushi! We use this one from Amazon.
Ingredients for Rainbow Sushi
- Sushi Rice
- Nori
- Imitation Crab (or leave it out if you’re vegan)
- 1 large Carrot
- 1 red bell pepper
- 1 small avocado
- 1 Cucumber
- 1 ripe mango
- 1/4 cup ripe pineapple, chopped
- 1/4 cup Apple cider vinegar
- 1 teaspoon Sugar
- Soy sauce for serving, if desired
- Fresh grated ginger for serving, if desired
Step 1: Cook your sushi rice according to the package directions. When it’s done, lay it out on a cookie sheet to cool to room temperature! In a small saucepan, combine 1/4 cup apple cider vinegar and 1 teaspoon of sugar over low heat. Mix with a wooden spoon only until the sugar is dissolved. Once this is cool, drizzle it over your rice and mix together to season your sushi rice!
Step 2: Prepare your ingredients. Don’t like what’s listed above? Feel free to sub your favorite fruits, veggies or meats. Thinly slice the veggies into long strips to fit well onto the sheets of Nori (seaweed) for your sushi rolls.
Step 3: Lay out your Nori onto the rolling mat. Put a thin layer of rice onto the Nori, leaving about 1/2 inch empty space onto the end.
Now comes the fun part – let’s add your fillings! Layer your fillings across the rice.
Step 4: Roll up your sushi firmly using your mat. Press it firmly as you go so that the ingredients don’t fall out when you cut the roll later! Dip your finger in water and run it across the empty 1/2 inch space on the Nori, then press it to seal up the roll.
That’s it – now it’s time to enjoy!
Use a super sharp knife to slice the roll.
If your roll falls apart (which a few of ours did before we got the hang of it) – no stress. Throw it together to make a rainbow sushi BOWL! It still tastes amazing.
